Ingredients
- 6 Cups chicken broth
- 1 cup uncooked wild rice
- 8oz sliced baby bella mushrooms
- 4 cloves garlic, minced
- 2 carrots chopped
- 2 ribs celery chopped
- 1 large sweet potato peeled and diced
- 1 small white onion peeled and diced
- 1 bay leaf
- 1 tablespoon parsley
- 1 can unsweetened coconut milk
- 2 handfuls of kale chopped
- salt & pepper to taste
Cooking Instructions
- Sauté on medium-high heat onion and celery for 5 minutes or just about clear, then add everything else in and sauté for another 5 minutes
- Add in broth, parsley, rice, and salt & pepper
- Bring to a boil then turn heat down to medium-low, cover & simmer for 30 minutes
- Add chopped chicken, coconut milk, and kale
- Cook an additional 10 minutes on low heat
