Summer Fiesta Salad
♡ Chopped Mixed Greens
♡ Sliced Cherry Tomatoes 
♡ Sliced Avocado
♡ Fresh Corn
♡ Sliced cooked Beets (store bought shortcut)
♡ Pickled Red Onion 
♡ Chopped Asparagus & Zucchini mixed with 1 tbsp EVOO (baked on a greased baking sheet for 10 min @ 400°)
♡ Chili Lime Grilled Chicken
♡ Topped with Chili Lime Vinaigrette and fresh cilantro.
Pickled Onion Recipe:
♡ 1 medium red onion, very thinly sliced
♡ ½ cup water
♡ ¼ cup distilled white vinegar
♡¼ cup apple cider vinegar 
♡ 1 tbsp honey
♡ 1/2 tsp sea salt
♡  red pepper flakes 
Pack red onion into a mason jar. Combine all other ingredients into a pot and bring to a slight simmer. Then pour over onions. Cover and let marinate for 30 min.
Chili Lime Dressing
♡ 1/2 cup extra-virgin olive oil
♡ 1/2 cup lime juice
♡ 1 tsp honey
♡ 1 tsp chili powder
♡ 1 tsp ground cumin
♡ 1 tsp paprika
♡ 1/2  tsp salt
♡ 1/4 tsp cayenne
Combine everything and give it a good stir  before use.
Chili Lime Chicken Marinade
♡ Juice from 2 limes
♡ 1/4 cup EVOO
♡  1/2 tsp Garlic Powder
♡ 1/2 tsp of both salt & pepper
♡  tsp Chili Powder
♡ 1/2 tsp Cilantro 
Marinate 1lb of chicken for at least 30 min
Gill for 4-5 min each side
