Ingredients
- 1lb ground turkey
- 1 green pepper diced
- 1 onion diced
- 1 tbsp diced garlic
- 1/2 tbsp olive oil
- 2 tbsp chili powder
- 1 tbsp cumin
- 1/2 tsp salt
- 1 tsp black pepper
- 1/2 tsp smoked paprika
- 1 15oz can pumpkin puree
- 1 15oz can pinto beans (drained)
- 1 15oz can black beans (drained)
- 1 28ox can diced fire roasted tomatoes
- 1 15oz can reg diced tomatoes
In a large pot add olive oil & sauté pepper & onion over medium heat then set aside. Cook ground turkey in the same pot till cooked through. Add in chili powder, cumin, smoked paprika, salt & pepper while the ground turkey cooks. When the meat is cooked through add the veggies back along with the pumpkin puree, beans, and the tomatoes with their juice to the pot. Cover and simmer for 25 minutes.
