Ingredients
- 1 tbsp olive oil
- 1 clove garlic minced
- 2 cups broccoli florets
- 1 red pepper diced
- 1/2 a yellow onion diced
- 1 cup sweet potatoes diced
- 8 large eggs
- 2 egg Whites
- 1/4 cup almond milk (or regular milk)
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup shredded cheddar cheese
- 1/4 cup crumbled feta
In a large skillet, heat the olive oil. Then add the garlic, broccoli, red pepper, onion, and sweet potatoes. Cooking, stirring over medium heat until the vegetables are soft, about ten minutes. While the vegetables are cooking, whisk together the eggs and egg whites. Then whisk in the milk, salt, and pepper and stir in the cheddar cheese and feta cheese. Once the vegetables are cooked, pour them into a sprayed 9 inch glass pie plate. Pour the egg mixture over it, smoothing it out so it is all even. Put in the preheated oven and bake at 350 for 30 minutes or until the center of the quiche is firm. Let it sit for five minutes and then serve and enjoy!
