Chili Lime Shrimp Bowl

Recipe:

Shrimp Marinade:

  • 1 Lemon juiced
  • 1 Lime juiced
  • 1 tbs Olive Oil
  • 1 tsp Chili Powder
  • 1 tsp Garlic Powder
  • 1/2 tsp Sea Salt
  • 1/2 tsp Pepper

* Prepare Uncooked Shrimp, Marinate for at least 30 min, Grill Shrimp 1 min per side.

Salad Dressing:

  • 3 tbs Rice Vinegar
  • 1 tbs Olive Oil
  • 2 Limes juiced
  • 1 tsp Chili Powder
  • 1/4 tsp Garlic Powder

Salad Fixings layered as listed:

  • Kale
  • 1/2 cup cooked Quinoa
  • Sliced Cucumbers, Cherry Tomatoes, Avocado, Shredded Carrots, or any other veggies of choice.
  • Add Shrimp
  • Top with Chipotle Lime Mayo (I like the Primal Kitchen Brand) and diced green onions.
