Butternut Squash & Chicken Stew

Ingredients
  • 1 tbsp olive oil
  • 1 medium onion chopped
  • 3 garlic cloves minced
  • 1.5lbs chicken breasts boneless
  • 2 tsp oregano
  • 2 tsp dried parsley
  • 1 tsp curry powder
  • 1/2 teaspoon red chili flakes 
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 medium-small butternut squash peeled and cubed * shortcut~ I get the precut squash
  • 2/3 cup quinoa uncooked
  • 14oz diced tomatoes
  • 4 cups chicken broth
  • 1 bay leaf
Sauté onion and garlic in pan on medium-high heat. Then toss everything in the crockpot, chicken first so it's on the bottom. Cook on high for 3 hours or low for 6 hours. When done, remove bay leaf and pull out chicken, shred, then stir back into the stew. ENJOY!!!!
