Ingredients
- 1 tbsp olive oil
- 1 medium onion chopped
- 3 garlic cloves minced
- 1.5lbs chicken breasts boneless
- 2 tsp oregano
- 2 tsp dried parsley
- 1 tsp curry powder
- 1/2 teaspoon red chili flakes
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1 medium-small butternut squash peeled and cubed * shortcut~ I get the precut squash
- 2/3 cup quinoa uncooked
- 14oz diced tomatoes
- 4 cups chicken broth
- 1 bay leaf
Sauté onion and garlic in pan on medium-high heat. Then toss everything in the crockpot, chicken first so it's on the bottom. Cook on high for 3 hours or low for 6 hours. When done, remove bay leaf and pull out chicken, shred, then stir back into the stew. ENJOY!!!!
